Nest learning thermostat etc. utilise 2.4 GHz and WPA2‑Personal (not WPA3) so should be fine if you configure 2.4GHz for IoT and can be tweaked to suit especially if given a dedicated SSiD.

SIP Passthrough is an ASUS router feature that allows VoIP traffic (SIP protocol) to pass through the router without being blocked or modified by NAT etc. so should help if enabled and worth a try but your issues could be more complicated.

Also, make sure assign a dedicated IP for your voip device if possible as this could also help and also look at reducing the SIP registration interval which is done via the VoIP device itself usually.
