Well tis morning my Son booted up his Xbox One X console and it instantly told him there was an update for his Xbox 1 console, so he updated and so far no Xbox disconnects during gameplay for the last month 
Update: Yesterday, he could not connect to his Xbox One F1 2020 game and after manually checking to see if an update was available for F1 2020, which there was, he then installed update and was able to connect
So disabling Auto updates on Xbox Console does seem to stop Xbox 1 X Condole automatically updating during gameplay
