I have worked on a couple in my time and usually the cutout suits the Gas hob, if you are adding a slightly larger hob, then you probable will need to take a little extra out of the existing cutout (width) to accommodate.
Measurements of cutout for hobs are usually available online, so try to find the new hob that has the same cutout dimensions or less than your current hob.
Only point you need to consider, is that a new Gas hob may need new gas pipe feeding or modified to it and any Gas work requires a Gas Safe (Corgi) engineer for that aspect, to ensure correct gas flows and leakage etc. keeps house insurance company happy etc.
I am sure most Gas Engineers are happy to adjust worktops to accommodate size adjustments needed, just make sure they are aware of this before you book them in.
