Problem with DSL-AC68U is that DSL chip produces much heat too and by design its a mess!
Temps cant be seen on GUI with AsusWRT and as soon as you load GNUton’s firmware you get awar of the high temps inside. They will be at 90°C by default – NOT GOOD.
Here someone started a project to reduce temps of DSL-AC68U, he is still writing and testing:

OS 7.11 released for 7590-DE (optimized DSL-driver and some other improvements).
I expect it for 7590 international version in July.

search for something quiet, maybe this could be a good one (didnt search long or read reviews): https://www.amazon.co.uk/ELUTENG-USB-120mm-Geh%C3%A4usel%C3%BCfter-Metallgrillschutz/dp/B06XCTHQG3?th=1

It will go down 20°C and more which has often been seen for similar models.
This will save your internal components from fast aging and stop overheating issues.
Wifi and CPU may have same heatsink or Wifi is badly positioned.
Most Asus routers have Wifi chips below 60°C and CPU <70°C, some like RT-AC68U even seen upto 80 but only for CPU.
And all these temps are already very high compared to other manufacturers using same chips.
Because there is no internal fan everything inside will go much to hot and even if wifi and cpu may run that hot without demage all other components aging very fast especially caps.

and then it would be seen on all temps, not only 5G chip.

Wifi chips have to be below 60°C and CPU should be about 70 and can go up to 80 on some routers if cooling is not well done inside (sometimes bad contact to heatsink).
Return as soon as possible or you will loose 5G or complete router!
The problems you see comes from 5G overheating 2G too beside many other parts on mainbord not designed for that high temps.
If it is a problem to return try it on your own to replace heatsinks and thermal pads.
Maybe 5G chip is already defective and thats why so hot, than cooling cant be improved.

I would turn off QoS and activate acceleration, QoS never worked reliable.
Test it both ways one or more days and you will see which config will be better for you and your family.
And you will see if it gets faster and whats worth more in your situation.
There is not the one and only best config for all.

I personally would use Gnuton DSL-firmware for this router to get Merlin features, dont use RT firmware as it is a DSL type modemrouter.
If you set the modem in bridge mode you will have fully functional router capabilities on Asus router. Otherwise you have Double NAT config and your modem is in router mode too and need DHCP on.
From IT perspective it would be better to have it in bridge mode, usually no need to logon to a modem (in pure modem mode=bridge). Worst case power off/on and it should run again if something hangs.
Well, best would be to use your Asus DSL as modemrouter alone without draytek and save power for 2nd device.

Had some hard time 30 years ago with their Fritz-Cards for Fax and POTS-56k modem installing on friends PC or laptops, so I could not believe they make reliable modemrouters now, turns out I was completely wrong!

nice video: https://support.zen.co.uk/kb/knowledgebase/broadband-understanding-rein-and-shine
maybe helpful to localize REIN/SHINE with an AM radio receiver at 612KHz.

I went with Fritz!Box 7590, but for sure a cheaper 7490 or what UK_Sentinel recommended a 3490 will be fine too and you get it used for down to 50€. I am very happy with them and came from many different Asus routers too with nothing but troubles. They offer everything in their settings and nothing is really useful or reliable working. Incredible what you can set, but it wont work because of buggy firmware while hardware could do very well. Known bugs ar never solved and new are coming with each firmware update. One step forward and 2 back … thats their behavior in my for sure personal observation.

NO, it is not related to Gnuton, only that it will be shown with Gnuton/Merlin in first place and somewhat hidden with stock firmware (or even not shown at all, cant remember).

not a single one had or posted troubles with flashing GNUton’s firmware.
But 2 had very high CPU-temps 90-100°C, but already with AsusWRT and first time saw it with Gnuton-Merlin!
